Ingredients

90800g flour
1589g yeast
45400ml milk
6810g sugar
68100g pork belly

Steps

  1. Activate yeast in warm milk with a pinch of sugar. Mix with flour and knead until a smooth dough forms.
  2. Let the dough rise in a warm place for 1-2 hours, until doubled in size.
  3. Punch down the dough, roll it out, and cut into circles. Fold each circle in half over a piece of parchment paper.
  4. Let the shaped buns rest for another 30 minutes.
  5. Steam the buns in a steamer basket for 10-12 minutes until puffy and cooked through.
  6. Fill the warm buns with braised pork belly and other toppings.
