47600g rice noodles
595pcs star anise
35700g beef slices
3570g basil

Steps

  1. Char ginger and onions over an open flame or under a broiler until fragrant and blackened in spots.
  2. Toast star anise, cloves, and cinnamon sticks in a dry pot until fragrant.
  3. In a large stockpot, combine charred aromatics, toasted spices, and beef bones. Cover with water and simmer for at least 6-8 hours, skimming impurities.
  4. Strain the broth for a clear soup. Season with fish sauce and sugar.
  5. Blanch rice noodles in hot water until just tender. Place in serving bowls with thin slices of raw beef.
  6. Ladle the boiling hot broth over the beef and noodles, cooking the meat instantly. Serve with fresh basil, bean sprouts, and lime.
