3200g spaghetti
48cloves garlic
800ml olive oil
40g chili flakes
160g parsley

Steps
- Bring a large pot of salted water to a boil and cook spaghetti until al dente.
- While the pasta cooks, gently sauté thinly sliced garlic in olive oil over low heat until fragrant and lightly golden. Add chili flakes.
- Reserve a cup of pasta water, then drain the spaghetti.
- Add the drained spaghetti to the pan with the garlic oil. Toss to combine, adding splashes of pasta water to create a light, emulsified sauce.
- Stir in fresh parsley and serve immediately.
