7600g chickpeas
1140ml tahini
38cloves garlic
570ml lemon juice
760ml olive oil

Steps
- In a food processor, combine tahini and lemon juice. Process for 1 minute until whipped and creamy.
- Add the olive oil, minced garlic, cumin, and a pinch of salt to the processor. Process for 30 seconds to combine.
- Add the rinsed and drained chickpeas to the food processor.
- Process for several minutes until the hummus is thick and exceptionally smooth.
- Taste and adjust seasoning if needed. Serve drizzled with a little more olive oil and a sprinkle of paprika.
