Ingredients

24000g chickpeas
3600ml tahini
120cloves garlic
1800ml lemon juice
2400ml olive oil

Steps

  1. In a food processor, combine tahini and lemon juice. Process for 1 minute until whipped and creamy.
  2. Add the olive oil, minced garlic, cumin, and a pinch of salt to the processor. Process for 30 seconds to combine.
  3. Add the rinsed and drained chickpeas to the food processor.
  4. Process for several minutes until the hummus is thick and exceptionally smooth.
  5. Taste and adjust seasoning if needed. Serve drizzled with a little more olive oil and a sprinkle of paprika.
