Steps

  1. Cut chicken into bite-sized pieces and marinate with yogurt, curry powder, and a pinch of salt for at least 30 minutes.
  2. In a large pot, heat oil over medium heat. Sauté chopped onions until golden brown.
  3. Add minced garlic and ginger, and cook for another minute until fragrant.
  4. Stir in the tomatoes and cook until they break down and form a thick paste.
  5. Add the marinated chicken to the pot and cook until it's no longer pink.
  6. Pour in a cup of water or chicken broth, bring to a boil, then reduce heat and let it simmer for 20-25 minutes until the chicken is tender and the gravy has thickened.
  7. Garnish with fresh cilantro and serve hot with rice or naan.
