250ml cream
150g sugar
4pcs egg yolks
50ml flavoring

Steps
- Gently heat milk in a saucepan. In a separate bowl, whisk egg yolks and sugar until pale and creamy.
- Temper the egg mixture by slowly pouring in the hot milk while whisking constantly.
- Return the mixture to the saucepan and cook over low heat, stirring, until it thickens into a custard (coats the back of a spoon).
- Stir in cream and your desired flavoring. Chill the custard base thoroughly in the refrigerator for at least 4 hours.
- Churn the cold custard in an ice cream maker according to the manufacturer's instructions.
- Transfer the gelato to a container and freeze for a few hours to firm up before serving.
