273000ml milk
136500ml cream
81900g sugar
2184pcs egg yolks
27300ml flavoring

Steps

  1. Gently heat milk in a saucepan. In a separate bowl, whisk egg yolks and sugar until pale and creamy.
  2. Temper the egg mixture by slowly pouring in the hot milk while whisking constantly.
  3. Return the mixture to the saucepan and cook over low heat, stirring, until it thickens into a custard (coats the back of a spoon).
  4. Stir in cream and your desired flavoring. Chill the custard base thoroughly in the refrigerator for at least 4 hours.
  5. Churn the cold custard in an ice cream maker according to the manufacturer's instructions.
  6. Transfer the gelato to a container and freeze for a few hours to firm up before serving.
