900g cream cheese
200g graham crackers
250g sugar
4pcs eggs
200ml sour cream

Steps
- Preheat oven to 175°C (350°F). Crush graham crackers and mix with melted butter, then press into the bottom of a springform pan.
- In a large bowl, beat cream cheese until smooth. Gradually beat in sugar, then eggs one at a time.
- Stir in sour cream and vanilla extract until just combined.
- Pour the filling over the crust. Bake for 1 hour. The center should still have a slight wobble.
- Turn off the oven and let the cheesecake cool inside with the door ajar for 1 hour to prevent cracking.
- Chill in the refrigerator for at least 4 hours, or preferably overnight, before serving.
