Ingredients

3600g cream cheese
800g graham crackers
1000g sugar
16pcs eggs
800ml sour cream

Steps

  1. Preheat oven to 175°C (350°F). Crush graham crackers and mix with melted butter, then press into the bottom of a springform pan.
  2. In a large bowl, beat cream cheese until smooth. Gradually beat in sugar, then eggs one at a time.
  3. Stir in sour cream and vanilla extract until just combined.
  4. Pour the filling over the crust. Bake for 1 hour. The center should still have a slight wobble.
  5. Turn off the oven and let the cheesecake cool inside with the door ajar for 1 hour to prevent cracking.
  6. Chill in the refrigerator for at least 4 hours, or preferably overnight, before serving.
