Steps
- Preheat your oven to 180°C (350°F) and line a loaf tin with parchment paper.
- In a bowl, cream together the butter and sugar until pale and fluffy.
- Beat in the eggs one at a time, then stir in the zest and juice of the lemons.
- Fold in the flour gently until just combined, then pour the batter into the prepared tin.
- Bake for 40 minutes or until a skewer comes out clean.
- While the cake is baking, mix icing sugar with lemon juice to make the drizzle.
- Once baked, poke holes in the cake and pour over the lemon drizzle while still warm.
