Zesty lemon cake with drizzle

Steps

  1. Preheat your oven to 180°C (350°F) and line a loaf tin with parchment paper.
  2. In a bowl, cream together the butter and sugar until pale and fluffy.
  3. Beat in the eggs one at a time, then stir in the zest and juice of the lemons.
  4. Fold in the flour gently until just combined, then pour the batter into the prepared tin.
  5. Bake for 40 minutes or until a skewer comes out clean.
  6. While the cake is baking, mix icing sugar with lemon juice to make the drizzle.
  7. Once baked, poke holes in the cake and pour over the lemon drizzle while still warm.
