Steps
- Bring a large pot of salted water to a boil and cook the pasta until al dente.
- While the pasta cooks, dice the pancetta and fry it in a pan until crispy.
- In a bowl, whisk together the eggs and grated parmesan cheese until smooth.
- Drain the pasta, reserving some cooking water, and add it to the pan with pancetta.
- Remove from heat, then quickly stir in the egg and cheese mixture, tossing to coat the pasta and create a creamy sauce.
- Add a splash of reserved pasta water if needed for creaminess, then serve immediately with extra parmesan.
