2000g pasta
15pcs eggs
750g pancetta
500g parmesan cheese

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta until al dente.
  2. While the pasta cooks, dice the pancetta and fry it in a pan until crispy.
  3. In a bowl, whisk together the eggs and grated parmesan cheese until smooth.
  4. Drain the pasta, reserving some cooking water, and add it to the pan with pancetta.
  5. Remove from heat, then quickly stir in the egg and cheese mixture, tossing to coat the pasta and create a creamy sauce.
  6. Add a splash of reserved pasta water if needed for creaminess, then serve immediately with extra parmesan.
